01 — Private Chef
Private chef in Houston,

A tasting menu at a great restaurant is someone else’s evening and you are a guest in it. A private chef dinner is yours: your table, your people, your music, no reservation window, no check at the end of the night.

The Evening
What actually happens
Chef Fassi arrives several hours before service with everything already sourced. He works quietly, sets his station, and begins. Courses leave the kitchen on the rhythm of the room rather than a stopwatch — if the conversation is good, the next plate waits.

- A written menu you can revise
- Market-driven sourcing — Gulf seafood, Texas beef, produce bought the morning of
- Plated, course-by-course table service

In-laws, investors, the board. A controlled, excellent evening when the stakes are social.
Cuisine
French technique. Italian hands. Argentinian fire.
Le Nôtre gave him the method: sauces, butchery, pastry, precision. The family table gave him the rest — pasta rolled by hand, beef cooked over live coals, a chimichurri that is not negotiable.
Menus lean modern and seasonal rather than themed. Dishes that come up again and again: red snapper ceviche with mango, cucumber, serrano and cilantro; lobster risotto; jerk-spiced Australian lamb chops; seared scallops; burrata caprese with heirloom tomatoes; skirt steak with chimichurri off live fire. Vegetarian and vegan tasting menus are written with the same ambition, not as a substitution.
“Having dinner prepared in our home made the entire night feel special. The menu was exactly what we wanted, and the experience felt completely effortless.”

FAQ
Hiring a private chef in Houston
What is included in a private chef dinner?
Menu consultation, all sourcing and shopping, cooking in your kitchen, plated course-by-course service, and complete cleanup. Chef Fassi brings his own knives and equipment. You provide the table.
How many guests can you cook for in a home?
Two to roughly twenty for a seated, plated dinner, depending on your kitchen. Beyond that the evening moves into catering, where additional staff and equipment are brought in.
Can you do a weekly meal prep service instead of a dinner party?
Yes. Ongoing clients receive a rotating weekly menu cooked fresh and stored with heating instructions — the same sourcing and standard, built around your household’s schedule and nutrition goals.
Do you bring servers?
For dinners above eight guests, or any evening with passed canapés and wine service, a server or two joins him — included in your quote rather than added to it. Smaller dinners are typically handled by the chef alone.
Will you work with my wine?
Gladly. Share what is in the cellar and the menu will be written to it, or name a budget and pairings will be suggested for you to purchase.
